If there’s one food stuff that makes us all go weak in the knees, it is chocolate! In fact, this elegant ingredient is such that it turns the most aged people into kids! We all have our chocolate memories from our childhood. From snacking onto Cadbury Dairy Milk bars and eating chocolate popcorn in the theatres. To having it in the most modern, fusion dishes like chocolate momos, chocolate samosa and the likes. Chocolate never was, is and will go out of fashion! I am dedicating this post to chocolate by sharing a collection of 25 Popular Chocolate Recipes that are eggless too. Enjoy!

History of Chocolate

There’s so much to write and talk about chocolate, that it is never enough. With a rather impressive history, this fine flavored ingredient has been known to mankind since time of the Mayans and Aztecs.

Such is the beauty of chocolate, that these civilizations considered it sacred. It was typically consumed as drink made from ground cacao beans mixed with hot water and, at times, spices – that they referred to it as the ‘Food of the Gods.’

Before I go on the signature compilation of Chocolate Recipes in this post, here’s some more insight into chocolate, an ingredient that is loved by so, so many people across all ages.

So, what exactly is chocolate? It begins with the cacao seed. When cacao seed kernels are fermented, dried, roasted and ground, it results in the foodstuff named ‘chocolate.’ This maybe in different forms like solid, paste or liquid, and also may occur as it is or as a flavoring in other foods.

The earliest known use of cacao, primarily as a beverage, dates back to the ancient Mesoamerican civilizations of the Mayans and Aztecs.

This usage is believed to be as old as the 19th to 11th century BCE. Despite its origins in the Americas, today, some of the world’s best cacao comes from African nations.

Types of Chocolate

Although in the present day, the market is full of a variety of chocolates that you may come across, but technically, the types are classified into 3 main categories:

  1. Dark Chocolate: Made by combining cocoa solids, cocoa butter, and sugar, dark chocolate contains the highest percentage of cocoa among all types. It does not contain milk solids, making it rich and intense in flavor. Dark chocolate is often considered as the healthiest type of chocolate because it is rich in antioxidants and has less sugar as compared to other variants. It can further be distinguished into ‘semisweet’ and ‘bittersweet’ depending on the content of sugar. Best for baking and cooking purposes.
  2. Milk Chocolate: When some amount of condensed milk or milk powder is also added to cocoa mixture along with cocoa solids, cocoa fat and sugar, it results in milk chocolate. This type of chocolate is best used for human consumption as it is and can also sometimes be used in cooking.
  3. White Chocolate: This can also be termed as pseudo chocolate because it does not really have any cocoa solids in it. Hence, is white in color. It is basically composed of cocoa butter, sweeteners and milk solids. It lacks the deep flavor of dark or milk chocolate and is often used for creating decorative elements in desserts.
