Aval upma / Kanda Poha

Simple, quick and yummy upma recipe with aval/poha/flattened rice. You may eat as it is , it does not need any side dish but you can have it with hot tea or coffee.



Ingredients:
Serves 3
  • 2 cups – Aval/Poha/flattened rice
  • 1 no – Onion (chopped finely)
  • 1 or 2 no’s – Green chilies (chopped)
  • 1/2 inch – Ginger chopped
  • 1/4 cup – Peanuts
  • 1/4 tsp – Turmeric powder
  • 1/4 tsp – Sugar
  • Lemon juice as needed
  • Salt to taste
  • Coriander leaves for garnishing
  • 1/4 cup – Water (only if needed)
Seasonings:
  • 1 to 2 tbsp – Oil
  • 1/4 tsp – Mustard seeds
  • 1/4 tsp – Split black gram/urad dal/ulunthu
  • 1/4 tsp – Bengal gram/ Kadalai paruppu
  • 1/4 tsp – Cumin seeds
  • Pinches of asafoetida
  • Fresh curry leaves

Preparation method:
  1. Wash the aval/poha/ flattened rice in a cold running water for 2 minutes and keep it aside until the poha is soaked.
  2. Heat oil in a pan, add peanuts and roast until they are slightly brown. Set it aside.
  3. In the same pan, season it with items in the list for seasonings. Followed by chopped onion, ginger and green chilies, little salt and saute until they reach the translucent stage.
  4. Add turmeric powder, soaked poha/aval (if poha is dry then sprinkle some water-completely optional, but recommended) and sugar, salt to taste, mix well thoroughly.
  5. Cover with a lid and cook for 2 to 3 minutes. By this time poha /aval will get cooked. Garnish with chopped coriander leaves and roasted peanuts. Serve with hot tea.


Notes:



  • Since my aval was little dry, I added or sprinkled little water just enough to make it soft. It is completely optional.
  • Sugar and lemon juice is a must ingredients in this recipe as it adds punch to the dish.
