Soft and Moist Tutti – Frutti Cake
Ingredients:
  • All purpose flour - 1 ¾ cups + 1 Tablespoon
  • Unsalted butter, softened - ¾ cup, or 1 ½ stick
  • Granulated Sugar - 1 cup
  • Baking powder - 1 ½ Teaspoon
  • Salt - ½ Teaspoon
  • Vanilla extract - 1 ½ Teaspoon
  • Eggs - 1 Nos, large
  • Egg yolk - 1 Nos
  • Milk - ¾ cup
  • Tutti-Frutti - ¾ - 1 cup, to mix in the batter
  • Tutti-Frutti - 2 Tablespoon, to spread on top
Instructions:
  1. Preheat oven to 375°F.
  2. Take ¾ - 1 cup of tutti-frutti and 1 tablespoon of all-purpose flour in a bowl and mix well. Set aside.
  3. Butter a 9X5 loaf cake pan, then slightly dust with flour or arrange parchment paper in the bottom.
  4. Sift together 1 ¾ cups of flour, baking powder, salt and set aside.
  5. In a large mixing bowl, add in the butter, sugar and beat until creamy for about 5 minutes.
  6. Add in the egg, egg yolk, vanilla essence and beat for 1 minute after each addition.
  7. Add in the flour mixture and milk alternately into this and beat at low speed till smooth and fluffy.
  8. Add in the flour coated tutti-frutti into the batter and gently fold it into the batter.
  9. Pour batter into the prepared cake pan, spread 2 tablespoons of tutti-frutti over the batter.
  10. Bake for about 30 minutes, then place an aluminium foil on top of the pan to prevent browning the top.
  11. Again bake for about 25 - 30 minutes or until golden brown or a wooden pick inserted in center comes out clean. Baking time may vary according to the oven model.
  12. Remove from oven, cool cake in the pan for 10 minutes, then transfer to a wire rack and cool completely.
  13. Serving Suggestions : Once the cake is completely cooled, transfer the cake to an air-tight container and serve after 1-2 days.
