It is an ideal tea-time snack recipe that can be prepared in minutes and can be stored for weeks in a large container. It is basically an extension of the Bombay mixture recipe with an addition of potato starch infused into the rice and besan flour dough.

Generally, we end up serving deep-fried pakora or bajji or even the bakery snacks like biscuits, cookies or puffs. But you can serve something healthy that can be prepared once and served multiple times aloo mixture or aloo bhujia mixture is one such healthy snack recipe.

I have posted quite a few instant snack mixture recipes on my blog, but this recipe is an ideal evening tea-time snack recipe. This is because of its simplicity, taste and the time it requires to prepare it. Moreover, the aloo mixture sev prepared in this is so crunchy, that it easily lasts longs for 3-4 weeks. In short, if you prepare this recipe once, you may serve it for weeks, yet it would not lose its freshness. In addition, it is loaded with dry fruits which not only make it tasty but also a healthy snack meal too. I personally add almost any type of dry fruits to it, but a basic combination of cashew nuts, almonds, raisins and peanuts should do the trick. you may add walnuts and pistachios too, but make sure to add them in the correct proportion.

Furthermore, some more additional tips, suggestions and variants to the aloo mixture recipe. Firstly, in this recipe, I have added the potato puree directly to the rice flour and besan mixture. This helps to easily mix the dough, but you may also add the boiled potatoes directly to the dough rather than making it puree. Secondly, the deep frying of the potato sev has to be done on a medium to low flame. This helps to achieve the crisp and crunch texture of the sev. Lastly, I have taken a medium-sized sev shaper which makes it an ideal size for this snack. Yet you may choose any type of shaper as per your preference.

Ingredients
  

for aloo sev:

  • 2 potato, boiled & chopped
  • ½ cup water
  • 2 cup rice flour
  • ½ cup besan / gram flour
  • ¾ tsp chilli powder
  • ¼ tsp turmeric
  • 1 tsp chaat masala
  • ½ tsp salt
  • water, for kneading
  • oil, for frying

other ingredients:

  • ½ tsp chilli powder
  • 1 tsp chaat masala
  • ¼ tsp salt
  • 1 tsp sugar powder
  • pinch hing
  • ¼ cup peanut
  • 2 tbsp almond
  • 2 tbsp cashew
  • ½ cup dry coconut, sliced
  • 2 tbsp raisins
  • few curry leaves

Instructions
 

  • firstly, in a mixer jar take 2 potatoes and blend to smooth paste adding ½ cup water. keep aside.
  • in a large bowl take 2 cup rice flour, ½ cup besan, ¾ tsp chilli powder, ¼ tsp turmeric, 1 tsp chaat masala and ½ tsp salt.
  • mix well making sure all the spices are well combined.
  • further, add aloo paste and water as required and start to knead the dough.
  • knead to the smooth and soft dough without putting much pressure.
  • now to prepare snacks, take the medium-sized hole mould and fix it to chakli maker. make sure to grease the chakli maker to avoid sticking.
  • stuff the dough into the chakli maker and close tight.
  • now press into hot oil by giving random shapes.
  • fry on low flame until the sev turns golden brown and crispy.
  • drain off to remove excess oil.
  • crush the sev slightly.
  • add ½ tsp chilli powder, 1 tsp chaat masala, ¼ tsp salt, 1 tsp sugar powder and pinch hing.
  • mix gently, making sure all the spices are well combined.
  • in the oil, place a sieve and fry ¼ cup peanut, 2 tbsp almond, 2 tbsp cashew, ½ cup dry coconut, 2 tbsp raisins and few curry leaves.
  • add in fried nuts and mix well.
  • finally, aloo mixture recipe is ready and can be stored in an airtight container for a month.
