Instant dosa recipes are generally a popular choice for morning breakfast meals due to their less complex steps. However, it generally contains plain flour or an instant fermenting agent like baking soda, eno which may be considered not a healthy option. Having said that, the instant dosa can also be prepared without such ingredients and Onion Tomato Dosa Recipe is one such simple and easy breakfast alternative.

I have posted a simple crispy wheat dosa recipe previously, which is a crispy version, but this recipe is totally different. This dosa is soft, thick and more importantly, loaded with vegetables and hence carries an omelette-like texture. As matter of fact, you may also refer to this dosa as a vegetarian omelette alternative. But I have posted a separate post on vegetarian omelette using besan or chickpea flour which gives the almost same texture and feel. I would still call this a simple and tasty dosa with vegetable topping. I have also shown a basic spicy coconut chutney which is an ideal side dish for this dosa but not limited to it. Firstly, this recipe is mainly prepared using wheat flour for the batter consistency with onion and tomato as additional flavoured toppings. However, you can easily replace wheat with maida for better taste and texture. I personally like the 1:1 ratio of wheat and plain flour, but to keep it healthy use just wheat flour. Ingredients
  

  • 1 cup wheat flour / atta
  • ½ cup rice flour
  • water, for batter
  • 2 tbsp oil
  • 1 tsp mustard
  • ½ tsp cumin
  • 1 tsp chana dal
  • pinch hing
  • 1 onion, finely chopped
  • 2 chilli, finely chopped
  • 1 tomato, chopped
  • 2 tbsp carrot, grated
  • 2 tbsp coriander, chopped
  • ¾ tsp salt
  • oil, for roasting

Instructions
 

  • firstly, in a large bowl take 1 cup wheat flour, ½ cup rice flour, and 1½ cup water.
  • whisk and mix well making sure there are no lumps.
  • add water as required and prepare a thick flowing consistency batter. keep aside.
  • in a pan heat 2 tbsp oil. splutter 1 tsp mustard, ½ tsp cumin, 1 tsp chana dal, and pinch hing.
  • add 1 onion, 2 chilli, and saute until the onion softens slightly.
  • further add 1 tomato, 2 tbsp carrot, and saute until the tomato turns soft and mushy.
  • cool the masala slightly, and transfer it to the batter.
  • add 2 tbsp coriander, ¾ tsp salt, and mix well.
  • prepare a smooth-flowing consistency batter.
  • heat the dosa tawa and pour the batter. spread slightly thick making sure the thickness is uniform.
  • spread some oil and cook on low flame.
  • flip over and cook both sides until the dosa is cooked well.
  • finally, enjoy onion tomato dosa with coconut chutney.
