Sweet And Spicy Watermelon Cooler

Until a few weeks ago, whenever we called home our parents, we mostly talked about the rising temperature in Kerala. I heard it was some kind of record heat this time and it was unbearable. Almost every other day, there was news in papers about people who suffered from sun stroke.  People were quick to compare how Kerala was becoming a mini Gulf in almost every way. Ironically, at that time, the weather here was pleasant and also it rained at times.

From what I heard, one of the most difficult things during the heat was to do the cooking. It seems people were dripping with sweat just by standing. So you can imagine, standing in a hot kitchen, in such a condition and doing our kind (Indian cooking) of elaborate cooking!!! Anyways, I'm glad that rain gods have finally made their appearence in Kerala.

It was during one of those high temp days, that Mummy (Jose's mom) shared about this Watermelon drink she tried. I knew then itself, it would come handy for us in a month's time. Yep, the Summer is here and the Sun is shining in all it's glory. I've a confession though, I prefer Sunny days than dull and gloomy days, but only if Sun was kind enough to lower some of it's intensity ;)

This recipe is such a refreshing one during this hot weather. I buy loads of watermelon during summer, juice it and stock it in my fridge. This sweet and spicy version of it, is a welcoming change from the regular juice. The spiciness is not bold, it's just an undertone that you feel once you finish drinking it. I added some Malibu too to pack an extra punch. Btw, you can also check out this Watermelon Float, that I tried earlier.

Sweet And Spicy Watermelon Cooler

Ingredients

  • 3 cups Watermelon chunks
  • 1-2 tsp Sugar
  • 8-10 Mint leaves
  • a pinch Salt
  • 2-3 slices Green chilli
  • 1-2 tbsp Lemon juice

Instructions

  • Mix everything together in a blender till it's smooth. Add crushed ice and blend, if you prefer a super chilled version. I also added 2 tbsp of Malibu, for a coconut flavour.
  • You can store it in fridge for 2 days.
