WHITE SAUCE MACARONI

Hi friends, welcome back to my blog. Today I am sharing a delicious and flavorful breakfast cum snack recipe that is a favorite among kids and cheese lovers. My daughter and me relish this dish and can have it almost every day. Since it is mildly spiced and loaded with milk, butter and cheese, Moms can also pack this in their kid's tiffin.

Here I have used All purpose flour, but you can also replace it with 1 tbsp wheat flour to make it more healthy. Also you can add more veggies and sweet corn for added taste. You can also use Penne or any other pasta to make this dish. Do try out the recipe and I am sure your family too would like it.

Let's move on to the recipe of making White Sauce Macaroni at home.

Ingredients

To cook macaroni

2 cups macaroni
5 cups water
1/2 tsp salt

To cook the spice mix
2 tbsp butter
1 finely chopped onion
3 cloves of garlic finely chopped
1/4 cup finely chopped capsicum/bell pepper
1/2 tsp salt
1/2 tsp pepper powder
1 tsp oregano
1/2 tsp red chilli flakes

To cook the white sauce
2 tbsp butter
2 tbsp all purpose flour/maida
2 cups milk
2 cheese cubes chopped
1/4 tsp salt
1/2 tsp pepper powder

To garnish
1 tsp oregano
1/2 tsp red chilli flakes
Pinch of pepper powder
1 tbsp chopped bell pepper

Method

  • Cook the macaroni in water along with salt for about 7 minutes or till the macaroni is cooked.
  • Strain the macaroni using a strainer and keep ready.
  • Heat butter in a pan, add onions and garlic and saute till they turn golden.
  • Then add capsicums and saute for a minute.
  • Next add salt, pepper powder, oregano and chilli flakes and mix well.
  • Switch off the gas and keep ready.
  • Now heat butter in another pan, reduce flame and add All purpose flour and gently roast for a couple of minutes in low flame.
  • Add milk and mix well such that there are no lumps.
  • Increase heat to medium and bring it to a boil.
  • Add chopped cheese, salt and pepper powder and mix well.
  • Switch off the gas.
  • Finally add the spice mix to this along with the cooked macaroni and stir.
  • Check for taste, add salt or pepper powder if necessary.
  • And if it is very thick, you can also add a few tbsps of milk.
  • White sauce macaroni is now ready, transfer this to a serving bowl and garnish with capsicum, oregano, pepper powder and chilli flakes.
  • Serve hot.
