RAVA KESARI - RESTAURANT STYLE

 



Hi friends, today I am sharing the recipe of Restaurant style South Indian Rava kesari. It is simply Sooji ka halwa, but adding ghee, saffron and dry fruits and cooking it in the correct way makes it more delicious and flavorful.

So without much time, lets move on to the recipe of making Rava kesari that you get in hotels like Saravana Bhavan and other South Indian hotels.

Ingredients required to make Rava Kesari

1/2 cup ghee/clarified butter

1 cup Sooji/Rava/Semolina

2 cups sugar

2 cups water

1/4 tsp cardamom powder

1/2 cup cashews and raisins

Pinch of saffron

Pinch of kesari food color


Method

  • Heat 4 tbsp ghee in a non stick pan, add the cashews and raisins and saute in a low flame while stirring, till the cashews turn golden and raisins puff up.
  • Transfer to a bowl and keep aside.
  • Then add 3 tbsp ghee to the same pan and add the Rava into it. Roast the rava in medium to low flame while stirring for 5 to 7 minutes.
  • Then transfer it to a bowl.
  • Now add 2 cups of water to the pan and bring it to a boil.
  • When water starts boiling, reduce flame and add the roasted Rava.
  • Mix well and close a lid.
  • Let the Rava cook in water for 2 to 3 minutes in low flame.
  • Then open the lid, add sugar, stir well and let the sugar dissolve.
  • Then add cardamom powder, saffron, food color, remaining ghee and roasted cashews and raisins and mix well.
  • Cook in low flame for about 2 minutes.
  • Switch off the flame and transfer the Kesari to serving bowls.
  • Serve warm.
