Ingredients mentioned below use standard measuring cups and spoons.

To marinate the beef


700g of flank steak
1 tablespoon oil(use sesame oil if available)
2 tablespoons of cornflour
2 tablespoon of soy sauce

To make the ginger-beef fry

1/2 cup of ginger peeled and cut into matchstick strips(this would roughly be about 50g of ginger)

3 tablespoon of oil(use sesame oil if available)
250g of green beans cut into two-inches(washed and trimmed)
1 large red paprika cut into thin slices
1 teaspoon red chilli powder
1 tablespoon of fresh ground black pepper

1/4 cup light soy sauce
1 teaspoon red chilli flecks(add more if necessary)
1 tablespoon of sugar
Salt to season
1 and 1/2  cup of water

Method

How to cut the flank steak for the beef fry.

Cut the beef(700g)into very thin slices, across the grain and make sure they are the same size.

Marinating the beef for the stir-fry.

Add the slices of beef into a large bowl, add cornflour(2tbs), soy sauce(2 tbs), oil(1tbs)onto the beef, combine well and leave it to marinate for 30 minutes.

Place the ginger strips(1/4cup)in a small bowl and season them with salt(1/2 teaspoon)and set aside.

How to cook the ginger beef fry.

Place a large wok or skillet over a low-medium fire and pour in the oil. swirl the oil around the pan and heat it.

Add the marinated beef to the wok, increase heat to medium-high and stir-fry the beef for 5-7 minutes until the beef changes color.

Once the beef changes color, reduce heat to medium-low and continue to stir-fry the beef until all remaining liquid evaporates.

Continue to fry the beef in the oil(add oil if necessary)until they turn crispy. 

Once the beef slices turn brown and crispy, transfer the beef chunks to a bowl.

How to make the ginger-pepper sauce.

Use the remaining oil from the beef stir-fry or add 2 more tablespoons of oil.

Add the beans(250g), red pepper(1), chilli powder(1tsp), black pepper powder(1tbs), ginger(1/4cup), and stir-fry the ingredients for 5 minutes over low heat.


Add 1/4 cup light soy sauce, sugar, chilli flakes, the crispy beef and toss the ingredients for 3 minutes. taste and season with salt if necessary.

Finally, add the water and slow simmer until beef is tender while the ginger-pepper sauce is thick and coating the beef.

Season with salt if needed and serve warm.
