This sausage recipe is something I do when I’m really tired or busy so even the whole meal should be simple enough to put together.

Breakfast with easy curried sausages.

  • You can either serve the curried sausages for breakfast with slices of bread and a pol sambol or onion sambol. 
  • Instead of a few fried sausages for your morning breakfast why not a sausage curry with your sunny side up eggs and a few toasted slices of bread?
  • If you are making a whole pack of sausages then portion it out and freeze it for a few other breakfasts serves throughout the week.
  • It’s ideal for a large family and with extra gravy, you can easily stretch the curry for a few more servings.

Storing- once cooled, refrigerate in a glass container, using plastic containers are fine but they do tend to stain due to curry powders.

Freezing-you can do this two ways, temper the sausages with the spices and freeze without adding coconut milk and only add coconut milk at the time you cook and reheat. this way you can extend the freezing period longer.

If you cook the sausage curry as the recipe below and want to freeze, make the coconut milk thin(1/4 cup coconut milk added to 1 cup of water), freeze and use within a week.

Reheating- let the curry reach room temperature and reheat over the stovetop or use a microwave.

Stop food waste by-cook only as much as you need.

How to make sausage curry.

The ingredients mentioned below use standard measuring cups and spoons.

Ingredients to make curried sausage recipe

3 tablespoons of oil

2 medium-sized onions sliced fine

1 large tomato chopped or cut into wedges

2 green chillies split through the middle

2- inch pandan leaf(optional)

A sprig of curry leaves(substitute with a bay leaf)

3 garlic cloves coarsely minced or chopped

1-inch ginger coarsely minced or chopped

1-inch piece of cinnamon(can cook without if needed)

1/2 teaspoon turmeric powder

1 teaspoon red chilli powder(increase as per your need, substitute with kashmiri chilli powder for a vibrant colour )

1 teaspoon black pepper powder(increase by only 1/2 teaspoon if needed)

1 tablespoon of curry powder(any regular curry powder would do)

1/2 teaspoon of dark roasted curry powder(optional, you can also substitute with Jaffna curry powder)

500g chicken sausage pack(if you are using a smaller sausage pack, like a 250g pack, reduce the ingredients in half).

1 cup of coconut milk(substitute with cooking cream)

Salt to season

Method

Have all the ingredients chopped and ready.

Cut each sausage into three. set aside.

Place a medium-sized pan over stove, pour in oil(3 tbs), add onions(2 medium), tomatoes(1 large), green chillies(2), pandan leaf(2-inch), curry leaves( 5-6 leaves), garlic(3 minced), garlic(1-inch, minced), cinnamon piece(1-inch).

Cook the above ingredients over low fire for 3-5 minutes until onions are soft.

Add turmeric powder(1/2 tsp), red chilies powder(1 tsp), pepper powder(1/2 tsp), curry powder(1 tbs), dark roasted curry powder(optional-1/2 tsp).

Gently combine the spices with the ingredients in the pan to make a rough curry paste.

Cook over low-medium fire and mix constantly to avoid the spices burning or sticking onto the pan.

Once you have the spice paste done, immediately add the cut sausage to the pan.

Cook over medium heat while combining. season with salt.

Cook for 3-5 minutes. do not fry or brown the sausages.

Add 1/2 cup of water and continue to cook for 15 minutes over medium fire.

If you are adding vegetables(peas, cubed carrots and potatoes), add them at this point.

Once the water has reduced and you have a thick liquid, you can make certain adjustments with the spices here.

By this, I mean adding extra curry powder or red chillies powder and mix it well.

But before making these adjustments, please do make sure to taste and check if you need the additional spices or you might have a sausage curry that is too spicy for the kids to enjoy.

Pour in the coconut milk(1 cup) and continue to cook until the colour of the gravy changes and you have a thick gravy.
