Simple Peach Cobbler

A simple, seasonal dessert made with peaches, quite well known in American households…

I feel excited doing this blog post from miles away from my usual place of stay. Last year, when we stamped our US visas just because HD felt like doing so, I thought that since we have ten years stamped, we may never travel any time sooner.  Earlier this year, when I quit work, the first thing I told him was that I wanted to go and stay with my sister. Ever since we got married, we have not had much of interactions as such. Our meetings have been very minimal and far apart. Even when we travel home at the same time, our stay at my parents’ home together was always very limited. This felt like the best way to get some time with her as well as visit a country that we so much enjoy in a lot of drama series.

 

We landed safely on Friday morning and had a little bit of a slug thanks to our jetlag.  The flight was around 14 hours but in midst of some sleeping, eating and watching a couple of movies, the time went by. Though it is summers here, we were welcomed by dark skies and a drizzle. After some resting, we went to see the Potomac river in the evening. The walk through the lush green to see the gushing river was quite an experience. We caught some deers in sight and felt like back home while watching a lot of fireflies in the darkness. On Saturday, we visited the Diyanet Cente of America, which has built an amazing masjid with Turkish architecture. We spent almost two hours just walking around the whole area and adoring the beauty of the masjid. We then drove to the town of Baltimore and what an amazing walk we had across the waterfront, seeing the multi cultural people of this country!

On July 4 was the Independence Day here and we went for a drive to Washington. All the monuments and musuems were closed, so we walked around the whole park and stationed ourselves near the Washington Monument for a couple of hours till the fireworks happened. While walking through the street, my girls were rubbing their knowledge off the movie ‘A Day in The Musuem’ and my sister was really impressed. Hehe… The fireworks were lovely and we did get stuck in some traffic but that wasn’t as bad as it would have been in Dubai. 😉

 

Day before yesterday, we went to a farm hoping for some berry picking, however we learned that berries are out of season already and now it is peaches and plums. Since these stone fruits get bruised easily upon picking, they didn’t permit any picking. But they had sale so we got some amazing peaches, and plums, red and yellow. I am having the yellow ones for the first time and they were super juicy and delicious. After tea time, we hoped into Costco to see what the hype is and I surely want to go there again. 😀

As soon as I eyed the peaches, all my blogger head wanted to make was a cobbler. I realized I have many fruit recipes but I don’t have an easy dessert recipe like a cobbler. Now what is a cobbler? It is a South American dessert usually made with fruits, baked in a deep dish with a cake like batter. Now, doesn’t that sound really easy? A cobbler is usually made with stone fruits like apricot and of course, peaches! When you get organic fresh produce, nothing beats the taste of the end product.

 

We first start with chopping the peaches and discarding the seeds. You may remove the skin but I didn’t bother to. The fruit is usually cooked slightly till it releases its juices but I chose to bake it to make it literally a one pot wonder. While the fruit bakes, you can whisk the batter and pour it on to further bake it till the fruit melts and merges into the batter. Just to make the batter a little less guilty, I used a little sour cream and reduced the butter. Only point to note is that the butter shouldn’t be whipped in completely. Either just give one folding or even pour the butter over the batter while in the pan. This dessert tastes best when warm and served with cold whipped cream or even ice cream. It is a heart warming dessert, to say the least. I guess this may be the first post to go up on the blog within 24 hours of making it. It didn’t make sense to post it anytime later… Hehe… Off to this simple recipe…

Simple Peach Cobbler

Ingredients

  • 6-7 peaches
  • 2 tbsp butter 25 gm
  • 1/2 cup brown sugar
  • 1 tbsp vanilla essence

FOR COBBLER MIX

  • 1 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 1/2 tsp baking powder
  • A pinch of salt
  • 1 cup milk
  • 2 tbsp sour cream
  • 4 tbsp butter melted (50 gm)
  • 1/3 cup crushed nuts optional

Instructions

  • Prehaet oven to 180 degrees. Keep aside a 13x9 inch pan.
  • Chop the peaches and deseed them. Spread them on the pan.
  • Sprinkle the brown sugar and vanilla over it. Chop the butter and spread. Bake for 10 minutes.
  • Meanwhile, in a bowl, whisk together the flour, baking powder, sugar and salt till combined.
  • Add the milk and sour cream and whisk till well combined.
  • Add the melted butter and give it just one mix. Do not blend in.
  • Take out the pan with the peaches and toss the whole peaches with the mixture. Pour the batter all over the peaches and push it back into the oven.
  • Bake for another 25 to 30 minutes till done. Broil for a minute to brown the top.
  • Serve warm - tastes best then! - or at room temperature with whipped cream or ice cream.
