The days of Ramadan are passing by fast. As this post goes for publishing, it is already the second ten days of this holy month. During the last week, I was listening to a Malayalam lecture and the main topic was of three virtues that Allah has not mentioned how much is the reward – Sabr (patience), Afuww (forgiving) and Sawm (fasting). For every other good deed we do, there is a number of reward associated with it, however for the above, there is no quantification of reward except that He will reward those who possess these quantities abundantly. That got me thinking.

“Indeed, the patient will be given their reward without any account.” (Surah Az-Zumar: part of Verse 10)

“And the retribution for an evil act is an evil one like it, but whoever pardons and makes reconciliation – his reward is (due) with Allah. Indeed, He does not like wrongdoers.” (Surah Ash-Shura:40)

 

Two toughest traits that a human being can have is patience and forgiveness. We get frustrated when life tests us or when our loved ones fail us. No wonder why Allah has given both these qualities a higher stature than all other good traits a human can have. Our Creator knows us the best for sure. For a long time, I have been striving to incorporate both into my life, though with how much success is to be seen. Alhamdulillah, I am finding it easier to forgive people though at times it does come only after a fleeting negative thought. But “sabr” is alluding me, but InShaAllah, I am trying my level best to learn it, especially when it comes to my family…

Coming to today’s post… My vegan days – which seems to have been long time now, almost eight months since I stopped! – had really enhanced my interest in vegan bakes. It just kept amazing me how we could create good cakes with eggs, butter or any diary. True, we can’t compare them to proper bakes, but that doesn’t mean that you restrict yourself due to dietary conditions! You can find the vegan bakes I have tried and posted here. InShaAllah, you will see many more coming in due course… 🙂

 

This vegan banana bread, that I have adapted from here, is just as perfect as it can get. First of all, it is totally loaded with bananas – lots of them! The amount of oil used is less, so you don’t get an unpleasant after taste because of it. I pumped it up with lots of dark chocolate chips and walnuts for the crunch, and it was just perfect for a cup of tea. After gulping down a couple of slices, this bake quietly entered into the league of my favorite banana bakes – the others being the Moist Banana Cake and Simple Banana Bread, among the many I already have on the blog! Vegan Banana Bread with Chocolate Chips and Walnuts

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup wholewheat flour
  • 1 tsp baking soda
  • 3/4 tsp cinnamon powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 3 ripe bananas approxmiately 500 gm
  • 1/2 cup almond milk
  • 1/4 cup oil
  • 1 tsp vanilla essence
  • 1/2 cup chopped walnuts
  • 1/2 cup mini vegan chocolate chips

Instructions

  • Preheat oven to 180 degrees. Grease a loaf pan.
  • Whisk the dry ingredients from flours to sugar till well combined.
  • In another bowl, mash the bananas well. Add the milk, oil and vanilla and whisk well.
  • Add the wet ingredients into the dry ingredients and fold in till well combined. Do not overmix.
  • Add a tbsp of flour into the chips and walnuts and mix well. Fold into the mixture.
  • Pour into the prepared pan and bake for around 40 minutes till skewer comes out clean.
  • Flip onto a cooling rack and cool completely before slicing and serving.

  5. Banana bread is something we make very often for snack time . but never tried the vegan version.. it looks absolutely yum and rich with those chocolate chips…love it
